Pasta Pecorino

This quick and easy pasta sauce recipe has been a family favourite in our house for as long as I can remember. It's great because it's relatively healthy, has a good balance of protein and carbs and tastes a million miles better than pasta sauce from a packet!


Ingredients:


dried pasta
175g Pecorino Romano cheese
1 lemon rind (grated)
250g 0% fat crème fresh
salt and pepper to taste
basil to garnish
chicken breast (optional)

Instructions:

1) Boil the pasta until it reaches al dente texture
2) Add the cheese to the lemon rind and melt in a pan with the crème fresh and season to taste
3) Add the sauce to the pasta and serve!
(If adding chicken, oven cook in advance until cooked through, allow to slightly cool before slicing into strips to add to the dish before serving)

We served this with an avocado and mushroom side salad with a drizzle of oil and sprinkling of pepper. Simple, easy food at its finest.
